Why is my 2003 Hyundai Elantra idling up and down and when I accelerate, it studders?

Thank you for everything you do Scotty love your channel, my car has 160000 miles and I took it to Autozone for an engine check light and it’s showing *P0507 idle control system RPM had high voltage than expected for a predetermined period of time.* Me and my dad already replaced the IAC with a brand new one from Amazon seller: DOICOO. Any idea what we could be missing? thank you sir.

Clean the MAF sensor as well. Also use the OEM for the IAC valve.

If the old IAC valve is around, you could clean it. (OEM is often much better than aftermarket, even a used OEM). Here's a video on cleaning IAC valves, if you're interested. This video shows how to do it with a Toyota IAC valve. It should be similar on the Hyundai:
