Why is my 2003 Subaru wrx cutting out.

Dear Scotty, big fan! I have a 2003 Subaru wrx turbo with a 5 speed manual transmission with 193k miles that is mostly stock. It has a Cobb stage 2 package with an accessport. When I press the gas from a compete stop the car would cut out between 1000-2000rpms. Does it every now and then. Also it sometimes doesn’t accelerate well. What could be the cause. So far I’ve checked injectors, plugs and coils. Thanks and have a great day

Check your fuel pump. I can most certainly say that your fuel pump is not adequate to meet the demands of your COBB stage 2 tune. You're fuel demand increases when you tune the car, so if you don't have a stronger fuel pump, you're going to have less fuel "on-demand". Use a scantool to check the fuel pressure (I'm sure your access port will do that for you) and consult with COBB for the recommended fuel pressure for running stage 2.
