I have a 1997 Camaro Z28 with 6 speed manual transmission that has 167,000 miles on it and don't know if the transmission oil has ever been changed. I'm thinking it hasn't because I've had it since about 90,000. It has no problems at all with shifting, so would it be risky to change it now like with an automatic, or is it okay even if it has been 167,000 miles without any fluid change?

no. Not even a little bit. Why would it be?
Change it whenever and as often as you like.
Maybe you're thinking of automatic transmissions?
