temperature gauge spiking

I currently drive a 2003 Ford Escape, back in November one of my radiator hoses broke and caused the car to overheat. Had to let it sit out in the cold for about a month due to me being busy and also not wanting to take it to a shop and rather fix it myself. Got the new hoses on, refilled the coolant, and the car was still spiking on the temperature. Checked my coolant and not much of it dropped. Is the Ford not circulating it properly and what can I do to fix this? (yes, I did try squeezing the hose and i did set the heat to full blast)
