I just recently purchased a 2003 Infiniti G35 sedan. It has 200,000 miles. Got it for $3,000. Has a great service history. Love to know if you have any knowledge to share about these cars and what to look out for.

It's almost 20 years old. I would do a full inspection on it and be prepared for anything. 200k miles is A LOT of miles for that car, or any car.
Make sure your cooling fans are working well. G35's had a massive recall regarding that back in the day. The fans would just stop working and the car would overheat. So check that out and also all your rubber and plastic items. (Belts, wipers, etc.)
It doesn’t have electric fans. Old school with a fan and clutch directly off the motor.
I’m getting it inspected and I’m totally prepared for drivetrain problems as far as ball joints and bushings.
The car was cheap enough to risk buying along with that it has a great service history and last 6 years was lady driven. Older couple owned the car and we’re very OCD type.

Infiniti G35s are very fun cars and reasonably reliable (solid Vq35De motor and good 5-speed auto tranny that's RWD based). The problem with a lot of them nowadays is that a lot of them are ragged out, modified, high mileage, or wrecked, so finding a nice one is very hard and I have seen really nice ones go for a pretty good amount of money. As they get high mileage like yours is, things can break on them being luxury cars but because they sold a lot of them, there is a pretty good aftermarket for them vs other Infinitis. As long as you maintain them, not put too many miles per year, it can still last quite some time.
