I know the Akebono's are great pads, but what about rotors/disks? Any recommendations? I think I remember Scotty saying that the brand didn't really matter, but more expensive is better lol. Would I need to replace the calipers too? Or how do you know when those need to be replaced?

For rotors, get something decent, don't buy the cheapest one. For calipers, if you don't have issues, just leave them alone.
