I have a 2018 Buick lacrosse with the 3.6 v6 and haven't been able to change the oil for a bout a year now it did sit unused for a few month I recently started driving it alot lately and last night my check engine light came on I checked my oil and it was a bit low so I added a quart and after driving for awhile the check engine light went away and it doesn't feel like theres anything wrong with the car should I be worried about this

There's usually a dedicated warning light for oil. The check engine light could be unrelated.
Get it scanned for stored trouble codes. If there's nothing then keep driving until it comes back.
