Hey Scotty, I have a 2016 Mazda 6 with 160k miles on it and I have never changed the transmission fluid because Mazda said it was life time. But now everytime I accelerate, it takes a while for the rpm to go back down. Does it have anything to do with transmission and also can I still change it?

I dont think it has anything to do with the transmission. Its probably something else since the actual shifting isn't affected. Maybe something with the throttle body?

I wouldn’t change it since the car is high mileage. If you want to take a gamble though, change it with the correct fluid, but save the old stuff, just in case.
For your rpm issue, watch Scotty’s video on how to make your car run better with a little spray cleaner.
