Greetings, Scotty!
My mom's 2008 Ford Explorer XLT 4.0L V6 (RWD), w/ 170K miles is becoming a safety hazard, due to the catalytic converters being stolen, the "check-fuel-inlet" light is on, and now its leaking coolant, which I speculate is from the crappy plastic T-stat housing, but recently my mom was driving on I-75, and it overheated for a second, then went back cool, but then out of nowhere it wasn't accelerating, which put her life at risk! I think it's the gas-pedal unit, or the throttle-position sensor (or it's connector), but I need your opinion.

You need to get it scanned for codes to see what's wrong. Free at auto parts stores.
