Scotty,
I service my automatic transmission fluid in my 2006 Ford Expedition every 30K. I wonder though, should I also be changing the transfer case oil at the same interval?

I would do that - get them knocked out while you are there. In fact I recently did just that on my truck (transmission fluid, transfer case, and differentials), and don’t have to think about it again for a few years.
Don't forget to grease all the u-joints!
