1992 Chevrolet Caprice 5.0L 305 V8 TBI 324,xxx miles
It's burning oil but intend to keep using it.
So besides checking & adding oil as needed, replacing the PCV valve more often and checking spark plugs more frequently for fouling & replacing as needed and also replacing as needed-
what else will I need to keep a close eye on to keep it running as best as possible given its condition?

Since that's an old-school pushrod V8 (basically 1950s tech) that lacks viscosity-sensitive hardware such as variable valve timing you could try a heavier oil to see if that reduces consumption. The reality though is you have a 32-year-old well-worn engine and there's only so much that can be done short of rebuilding it.
