But now, Toyota is using plastic where BMW was criticized for using it.
Are the cost of repairs for Toyota’s going to go up because of all this plastic? Is Toyota quality going to go down? Is Toyota turning into BMW in terms of becoming money pits due to plastic parts?

The BMW was a PITA. Plastic everything. And they wear out, and are expensive.
With my Prius, it is a little older, so it doesn’t have as much plastic parts.
Not mine, but I do drive a RAV4 Hybrid regularly (not to mention a regular RAV4 and CRV). They are too new, and not the age of the BMW when stuff was wearing out. So from my POV, it’s a waiting game.
I will tell you that on the RAV4 hybrid with the adaptive cruise control, the windshield cost a ton to repair, not because of the parts, but because of the configuration of the adaptive cruise control. Good thing insurance took care of that. But that’s a windshield and not plastic.
Who’s not using plastic these days? Peak reliability for Toyota was many years ago. Still, I would buy one over all other brands.

They are all turning into BMW. Which is why I won't buy any vehicle made after 2005.

Hahaha. I joke around with my friends that the golden era for cars (and Toyota Honda specifically) was 1996-2006ish. I guess I wasn’t too far off with your 2005 estimate.
New enough to have OBDII diagnostics, but old enough NOT to have all the additional things that break so easily.

It seems to me car makers deliberately make cars with ICE less reliable in favour of their electric products. It looks like they have some kind of agreement in that way.

I agree. But try to explain that to people who believe and follow such trends. Unfortunately they are in majority.
