I was watching this video from chrisfix about removing a paint scratch and he used 3000-5000 grit sandpaper and then fine polish. I can't find such fine sandpaper where I live but Can't I just use coarse polish instead and then fine polish afterwards?

you'll be there forever with polish. Automotive wet sanding paper is pretty common in hardware/tool/auto part stores and online for cheap.
