I am thinking of buying a 1991 Chevrolet cavalier convertible. Its a V6 manual with 85,000 miles for $2,500.
Is this going to be a reliable car or a money pit?

Well it's so old. One can never tell that old. Everything could be dry rotted and that would be a money pit when you had to pull the engine to change the rear main seals. The transmission when those seals go it could get super expensive. Most people would buy a convertible like that as a toy to play with on weekends which is okay but for an everyday driver. Something that old generally will turn into a money pit if you put any type of serious mileage on it
