My car manual says I should increase tyre pressure in winter ie at 40° it is 2 PSI more then non winter temperatures why is that.

because pressure changes with temperature.

For example, on a cold day my tire pressure will increase by 20 PSI after they've warmed up.

Air temperature can affect tire pressure by several degrees. I know personally I keep my pressures at 34-35 but when I stay up at my girlfriend's house where it gets much colder, my pressures will be 31-32 in the morning.
