I'm in the market for a new truck and I really like how reliable Toyota is so I've been thinking about the new Tundra. But the new ones are rumored to have either a twin turbo v6 or a hybrid which makes me question if those new engines will still be reliable or not. Any advice would be appreciated.

Don't be the guinea pig for new technology. Not with your own hard earned, atleast.
Reliability is dependable performance over time. Until time passes, there is literally no way to know.
However, there are ways to estimate the likely reliability. One factor in favor of reliability is development time. Tundra fans have been begging for an update for years, but development has been slow as molasses. Toyota hasn’t been moving slowly just to annoy loyal customers, they’re moving slowly to ensure quality.
Another factor is that even though this is a new model, it won’t include much new technology. The engine and hybrid systems have been in use elsewhere in the Toyota lineup for years. They are tried and true.
I had a 2014 Tundra, which was the first year of the current model. Zero problems. If I was in the market for a 2022 full size truck, and I may be soon, I would get one.
If nothing else, it’s pretty much a lock to be more reliable than any competitors full sizers.
