If you're interested here's a video of it running.

https://www.youtube.com/watch?v=5iR77uamSAU

It has a rebuilt 350 Small Block with Holley Sniper EFI.

I'm wanting to travel long distance with this vehicle and converting it to an automatic is very appealing for me since I've never driven manual.
After some research I've found out that the 700R4 Mounts up perfectly to the 350. Next question would be if the 700R4 will line up where the T10 is?

If not, I'll have to go to a shop to get that fabricated? I also understand that the drive shaft may need to be modified, just don't know the amount.

The 700R4 overdrive will bolt right up to the SB 350 but I am certain that significant modifications will be necessary to make it work for you.  A new, custom drive shaft is an absolute along with a transmission cooler and TV cable set up.  Beyond that, you may need some sheet metal surgery on the trans tunnel and will definitely need a new flex plate and get rid of all the clutch parts and mechanism.  Then there is the shift linkage itself for the 700R4 as well as a new cross member.  Good luck.

Why might I need sheet metal surgery? For reference I'm looking at this listing:

https://www.monstertransmission.com/700R4-Transmission-GM-Chevrolet-4WD--Bare-Bones-Factory-Build_p_16401.html?gclid=Cj0KCQiA2NaNBhDvARIsAEw55hjCTiiIzJTs4hdrDHG0qfvA8m6Zhd8zYZbmEeJ2IH5UwwFt75ABYUUaAmKSEALw_wcB

I've also seen in theses 700r4 installs that there is a kick down kit that aids in keeping the torque converter from spinning in final gear to keep the oil cooler.
..also any chance the current shift linkage may work?

What you are looking at is the bottom of the line 700R4 trans from Monster.  It doesn't say that it's just going to slide into your vehicle without (maybe) some modifications to the trans tunnel and floor pan.  The chances that your manual transmission linkage is going to work with the automatic is none.  Why would you want your converter to stop spinning in final gear?  I don't understand your question.  The TV cable is the kick down cable from the throttle arm to the trans to properly shift to a lower gear when you step on it.  The current shift linkage may be able to be bent, modified or jury rigged to work with the 700R4 but you're going to need a metal fabricator to work out the geometry, pivot points and connections.

P.S. - I would seriously consider a heavier duty model 700R4 from Monster or TCI because of the heavier weight of your vehicle. If I were in your situation, I would keep the manual. You'll get better gas mileage and they are easier to fix when necessary. And your brakes will last longer because you will have engine braking.

Instead of kick down kit I meant lock up kit for lock up supported torque converters.

Good luck.  Hope it works out.
