So my Sentra over heats after about 20 to 30 minutes of driving. The water pump is working, radiator is new, t-stat is new. But it still over heats. I don’t think it has a blown head gasket because there’s no oil in the coolant and no coolant in the oil. What do you think it may be?

oil in coolant is one symptom of blown head gasket. It is not a requirement.
Could be that 21 year old radiator cap is not functioning. Are your cooling fans coming on properly? Or working at all?
Radiator cap looks brand new and the cooling fans both come on when they should.
“Looks” don’t matter. Either pressure test it or replace it
years ago I used a generic thermostat in my Toyota and it did not moderate the engine temperature properly. Ever since I have used oem. So if you used a non oem t-stat, that could be the problem.
If the radiator is new, as you said, was all the air properly burped out of the system when the new fluid was added? I'll bet not.
