Any time you need to downshift while towing, such as when you're going uphill, the engine has to work harder (performing more revolutions per rotation of the wheels vs the same vehicle without the added weight). This generates additional heat that must be removed by the cooling system. If you're over the rated towing weight (passengers must be considered in the maximum towing weight), the engine can start to overheat.

What other troubleshooting steps have been taken? Is your radiator clogged? Are your fans working?

Please use the title line for a short description, not your full question. Thank you. (Title edited.)

@chucktobias sorry 1st time user. No i havent trouble shooted anything else. Like i said it runs find without over heating until im towing and going uphill. So im not sure what could be cause it to spike at those times but then be fine afterwards

Towing puts additional strain on the cooling system. See the troubleshooting section of the FAQ for tips on diagnosing an overheating condition.

How much are you towing, and what is your tow rating?
