89 ford E250 5.8 V8 burning oil

Hi everyone. I have a 1989 ford E-250 with the 351 Windsor in it. I did an oil change on her a couple days ago and she only had 2 3/4 quarts of oil, less than half of what it's supposed to be. There aren't any oil leaks, and the PCV valve seems to be fine. It only has 87,000 miles on it, so I don't think it's normal wear?

Only thing is she had an overheating episode about a month ago due to a bad coolant leak. Could that have damaged anything related to this? I'm open to any ideas. Thanks!

it's got low mileage, but it's over 30 years old. The valve seals are only rubber and it could be breaking down after all that time.

Yeah, probably. Another thing I should mention is I only see it blow smoke when the engine is cold. When it's warm nothing visible comes out of the tailpipe. Does that tell you anything?

it tells me that gaskets and seals could have shrunk.
As an engine warms up, things expand, and oil flows in to fill the gaps.
Also it's an '89. Tolerances back then weren't what they are now.
