I have a 2003-2005 Volvo V70 T5 with a blown head gasket or at least that's what I was told because it was my grandfather's car before he died. The mechanic I took it to said there where hydrocarbons in the cooling system and suggest I toss the whole engine and buy another. The problem is it's a T5 so it has a turbo and it's really hard to find another engine so should I scrap the car? Or have the head gasket replaced and have the cooling system flushed?
Unless you can do the work yourself the cost of replacing the head gasket will likely exceed the value of the car, and that's even before getting into whatever other damage may have occurred.
I would scrap the car. If you can't find parts for it, then I would get rid of it.

Then I would scrap still. I mean you can rebuild the engine but you need to find someone who knows how to rebuild Volvo engines. It's also going to cost a lot of money.
If its got low miles, might be worth finding a volvo NUT! Every state has them and they could possibly do the work. If its high miles and poorly maintained.............scrrrrape it!

It's got 80k on it and was well maintained. I found a book with everything fluid change marked on it.
I would keep it and at least get the head rebuilt and a new head gasket. There's nothing magic about rebuilding a Volvo or any other ICE.
