I am being offered a Porsche Cayenne 2008 version with a knocked engine. I was initially thinking I could get a Mercedes Benz ML350 engine from 2004 fitted into it. These would both be automatic versions. Would the mechanics be able to do that or it is just something to forget about? The second option I was considering is a VW Touareg engine. Sure, a Porsche engine would be good, but Porsches are generally very expensive. I'd appreciate your usual informed opinion.

Bad start right there. Run away.

You would be wasting your time and money trying to find someone to do that correctly.

You'd be crazy buying this vehicle and attempting to do any of the above. Look at something else.

Unfortunately, that’s gonna require SEMA-esque investments of time, effort, and $$. Huge amounts of custom fab and PhD-level tuning. Don’t know, but I’m willing to bet you can just go buy a new Cayenne (or 2) for less.
If you want the car, call your local Euro-motorwerk shop and ask their advice. Maybe they “know a guy” who can rebuild it. Otherwise, I wouldn’t bother.
We get lots of engine swap questions on this forum. But contemporary cars aren’t like classics where you can order an off-the-shelf kit to drop, say, an LS crate motor into a Tri-5 Chevy. Unless you have seen it done, it probably can’t be.
You’re crazy for doing it. But hey, there has been crazier things done. While I wouldn’t do it myself, you would probably have better luck with the Touareg engine because the Cayenne and Touareg are built on the same platform. Wedging a Benz engine would be much harder.
