- I will be replacing my brakes on my 2019 Mazda CX-5 soon and want to go with the Akebono ceramic brake pads.
Can I tell my mechanic to order and install these specific pads or should I purchase them and take them to him? Would they even allow this or do I have to purchase whatever brand brake pad they have in stock? How do mechanics feel about this?

ask how much he would charge for them, and then see what your price would be.

sounds like a question for your mechanic. It depends on the part. Brakes shouldn't be a problem.
It really depends on the mechanic. Some mechanics are cool with it, others aren’t.
One mechanic I work with, I just buy all the stuff on my own, and he installs it. Works for him, because it is his side hustle, not his main gig. His main gig is being a mechanic, for a fleet.
Another mechanic I worked with, he prefers to source things himself, so he can warranty the work.
And one other mechanic I work with, he’ll do whatever I ask, because it’s me, and I usually listen to myself. Joking aside, I’m not really a mechanic, but I do the odd job here and there for my car. And usually get the name brand parts I want.
For your mechanic, it doesn’t hurt to ask before taking your car in. Heck, he would probably even understand why you would want akebono brakes. But don’t get hurt if he says no. It’s his business, so he has to run it how he feels comfortable doing so.
If you give the auto shop your own sourced parts, they won't give you any warranty on the part itself and will blame the part if something goes wrong.
If you want Akebono pads so bad, just ask the shop to order them and expect to pay more since the shop marks up all the parts they buy to make few extra $$$.
