Just got a Honda Civic, 2021. It has 650 miles.
Getting used to the CVT.
After I accelerate and undepress the gas pedal, it feels a bit like a rubber band, not too smooth.
After letting the car slow by itself, when I add gas, it seems to slip, or doesn't engage right away.
Is this normal?
Sounds normal to me. CVTs don’t tend to drive like conventional automatics.
If you feel it’s behaving odd, go back to your dealership & ask to drive the test drive vehicle & check if it does the same, too.

CVT does not have traditional gears, obviously, it keeps changing the ratios continuously thus giving it the rubber band effect. When you let off the gas, the transmission goes to the highest possible ratio to save fuel thus, dropping the rpms. However, when you give it gas ,again it will chose an appropriate lower ratio, depending on the amount of gas you're giving, thus feeling like it is slipping.
But again if you feel like there is something abnormal, do as @inthrustwetrust said.
Sounds normal. You have to let it adjust and learn your driving style which takes a few thousand miles. The dealer will likely tell you that.
