No crank, no start, one click. Buick Rendezvous

2003 Buick Rendezvous, just over 100k miles.

FOB has not been locking doors for a while now, been ignoring that.

Unlocked the car, dome light illuminated, went to start the car and everything died. No lights, nothing on the dash, had to manually unlock doors.

Every time I disconnected/reconnected the battery, my lights and car doors worked again, but as soon I tried to start the car: no crank, no start, one click.

Could it be the starter? Thought it was weird that I could regain electronics but trying to start the car would kill them.

How many volts are you getting from the battery? If you are getting the correct voltage, then the starter may be the problem.

Load test your battery and alternator.

When you're starting the car, all of the battery's amperage goes to the starter. It's the most power-hungry device by far in the car. I've  started my 2017 Mustang with the door open a few times, and the dome lights go out when the car is starting. As soon as the car starts, the dome lights turn back on again.
