I have a 2001 Jagaur S-Type 3.0 V6 with 140,000 miles
When I brake hard or come to a complete stop very suddenly with heavy braking the cars RPM drops below 500RPM for a few seconds then picks up again, it has stalled out a few times. What could be the cause?
There is no warning lights etc when this happens and the car starts right up. It still runs and shifts like a dream.

Your brake booster is probably on its way out. If you're not on the brakes and it idles fine, but when you're on your brakes and the car struggles, odds are, your brake booster is failing. It uses engine vacuum to boost brakes, and when you have a vacuum leak at the booster, it let's a pretty large amount in.
Check the easy stuff first like filters and spark plugs, and try cleaning your throttle body and MAF sensor.

I've had the spark plugs replaced 10,000 miles ago (12 months ago) and the throttle body and MAFS sensor were cleaned out 3 months ago.
You could also check for vacuum leaks. Any original rubber hoses are bound to have deteriorated over the last 23 years. Other than that you're probably going to need to record live data when the problem occurs and analyze it to see what's going on.
