Scotty, what would be a good price to have the right and left CV shafts replaced on a 2007 Toyota Camry 4 cylinder?

Depends if someone is using brand new OEM shafts or rebuilt shafts from say an auto zone or Napa. Probably figure 2 hours of labor so figure about $200 in labor cost. Again a Toyota dealer probably much much higher.  I would just price out the shaft assemblies on line yourself then you'll have a relevant total price
