Hey Scotty, want to start by saying thanks for all the content you have made!
My dad bought a brand new Volkswagen Jetta R line in 2020, turbo 4 cylinder and have since put around 40k miles on it. The dealership does the first 5 or so oil changes free, however, say to go 10,000 miles per change, which I know you have debunked time and time again. Prior to its last oil change the oil light came on and when my dad checked it the car had almost no oil! The dealership responded with “it happens when these vehicles start getting up in mileage”. Would you suspect it burning oil, or under-filled possibly? Thank you in advance.
I would not be shocked if they didn't put all the oil in. If it was burning that much you should see evidence in the tail pipe. Hopefully no damage was done running it low. Anytime the oil is changed you should check it. I would also say check you oil weekly as well to see how much is being used.
Change the oil yourself or have a trustworthy mechanic to do it for you. Hopefully, your car does not burn oil, but if it does, try to use warranty (if any) to repair the engine.
I did my own oil change on the 2016 Jetta that I had. I don't trust the VW dealership. I had couple times where they didn't drain all the oil out and then put less new oil in. VW dealerships always dominate the region, unlike Toyota dealership where there's another 30 mins down the road.
