i have a 2017 Jeep grand Cherokee which I’ve had since 2019 and it now has 80000 miles. Ive been pretty meticulous with maintenance and upkeep and so far has rewarded me with an suv I’ve enjoyed. My question is regarding engine flushes like liqui/moly. Wondering if this is something I should consider? Speaking of miles, should I switch to a oil labeled for high mileage?

Dot not switch to different oils. Do not use snake oils. Do not fix what isn't broken. Just do all the recommended stuff. If anything, just do it more often.
Motor oil has detergents that are already in the oil, and you have an oil filter. Providing you change your oil regularly, there is no need to put extra detergents in, you're just wasting money.
Stay the course. Do not change oils or oil types. Change every 5,000 miles or once a year, whichever comes first. Be sure to use a premium oil filter as well. Also, don’t forget to change transmission fluid (and filter if applicable) every 40,000 miles.

I get the high mileage oil if it's the same price as the regular
High mileage oil is specifically made for high mileage engines. It's tge same brand, just slightly different formulation.
I know the Walmart brand they consider high mileage is everything over 75,000 MI
I don't think it's any worse than the regular oil in fact it may be a slightly better
