I have a 2008 Corolla S with 175k miles, and it has the typical rust problem on the roof, and I was thinking of just replacing the roof altogether due to the high-priced job of sanding down everything and re-painting.
I don't really care much about paint-matching a new roof, which is why I'm interested in the method of replacing it.
My biggest concern is the current rust:

Are you skilled at cutting and welding as well as windshield and rear window R&R?
If not, just paint it over with some Rustoleum.

That will cost a lot more than sanding the existing roof down and repainting it yourself, or having a cheap car painting place do it. Modern cars are unibodies; the roof is usually integrated into the the pillars of the car as a single unit and are not easy things to replace.
