Greetings from sunny and warm Florida.

I have a 2001 Ford Taurus, 3 liter vulcan V 6 with auto trans that I recently got off an elderly gentleman with 64000 on the clock. Everything works as it should but I was wondering if I should replace the 192 degree thermostat with a 180 to make the engine run cooler. Am i correct in thinking this way? I've seen that I can go as low as a 160. It gets pretty hot down here in the summer and would the switch make sense?

If the cooling system and thermostat still work great, I would say just stick with the one that’s in there. You may want to consider changing the coolant to optimize the system’s efficiency, especially if it’s been a long time since the coolant was last changed.
