I have a check engine light on my truck for a Cat, Oxygen sensor,  and Knock Sensor. Should I cut off my cat instead of replacing my cat. Also, what happen if I  don't replace my knock sensors.

why would you do that. Diagnose first. Maybe all you have is a leaky exhaust.

Look up your codes on obd-codes.com and follow the troubleshooting exactly.

In theory you can cut off your cat and run a straight pipe, but I don’t recommend doing so, because it is most likely illegal in your jurisdiction. Especially if they do inspections.

As for the knock sensors, TBH, I really don’t know for sure. From what I understand, the knock sensor is there to help the computers figure out the air fuel ratio and timing for the engine and adjust accordingly. If the knock sensor is broken, the engine can’t adjust. Knock can potentially compromise the engine.
