Bad coolant/ engine temp sensor?

I have a 2017 chevy colorado V6 and one day I noticed the engine temperature gauge needle was completely flat at cold temp (not registering temperature). When I stopped, I noticed the cooling fan was stuck on and it wouldn't turn off until about 5 minutes after the engine was shut off. Then when I started the engine again the fan came back on and then I noticed the AC didn't work. My friend told me to unplug the battery and plug back in then start the truck.  The cooling fan turned off, the temp gauge started reading the engine temp again and the AC started working again. I thought cool, problem solved. Then a couple days later it happened again. So I disconnected the battery, reconnected it and problem solved again. Until a day later, same issue happened. Could that be a bad engine temp sensor or something else?

Since it keeps resetting ever time you disconnect and reconnect the power to the circuit, replacing the temperature sensor seems logical.  Not likely the coolant itself.  A new sensor is only about $15.
