What is your advice on a solid used car for a 600 one way drive to and from home to college?

This kind of question has been asked many, many times here. You might want to use the site search feature and check out Scotty's video reviews of vehicles near the bottom of the main page.
The short answer would be a Toyota Corolla or Honda Civic. You did not state your budget but an older and/or high-mileage used car of any type would not be suitable for doing regular 1200-mile round trips.

I love Subarus, but after watching Scotty's video- I wasn't sure that a used Subaru would be a good idea. I love my Forrester Sport!

What year is your forrester? Let us know and we can tell you if it’s advisable to just continue to drive that car.

If you're talking about a new Subaru or one that's just a few years old they can be OK. I know quite a few people who own them and have not had any serious problems. However I would not buy an older Subaru or one with high mileage. (Old Subarus, prior to 2013 with the 2.5L engine, are prone to blowing head gaskets. The CVT is questionable as the newer models age and accumulate high mileage, especially if the fluid is never changed.)

If you want something that will hold up well in the scenario you specified they're the best game in town, though you have to avoid those models that have intrinsic problems.
Also, Scotty prefers the 4 cylinder Subarus over the 6 cylinder for modern ones

Consider the ride quality and comfort of the car you’ll be getting, as you’ll be spending hours in it. Also, how are the roads along the way? Is it up north with lots of snow and ice? Maybe it’s a rural college with crummy dirt roads? Are there lots of potholes along the way? Also, consider the size: how much stuff are you going to move to and from school at the beginning and end of the school year? Will you have a help with someone driving another car or uhaul with your other stuff, or will you need to stuff everything in your car, or perhaps you’ll be leaving stuff in storage or something over there in the summer?
