Every time I open the fuel tank I hear a noise "psssss" I can't tell if it's fuel vapor escaping or air coming in (if it's vacuum or pressure I wanted to check with smoke but I haven't had a chance to do it yet)...
I will note that this always happens both right after driving and if the car has been parked for a few days
Is this something normal?
I don't have a check engine light.
I will also note that I don't think my car has a fuel tank pressure sensor... so I don't know if I can even have an engine light

Get a scan tool and select live data and scroll down to see if you have a fuel tank pressure reading. I have an Innova scanner with ABS capability, and it'll read my 2017 Mustang's fuel tank pressure.
I assume this happens when you get gas. As your vehicle consumes gas, any space not occupied by fuel creates relative vacuum as the fuel level decreases. When you open the gas tank, the relative vacuum equalizes. Your evap canister vent valve may be obstructed.
@justin-shepherd I have a scanner, but I couldn't find a fuel tank pressure value in it, I also couldn't find a mention of such a sensor in the car book...
Could it be that my car doesn't have one?
