I have a new set of Michelins with only 2,000 miles on 'em. I just damaged the sidewall on one and need to replace it -- with such low mileage, can I safely replace just one? Or do I have to replace the pair? Thanks!
If you have AWD all of the tires need to be within a fraction of an inch of each other so all 4 would normally be replaced at the same time. However with only 2K miles on your tires a new one may be close enough. I would measure the tread depth on a new identical model tire and compare it with those on the car. If it's within about 1/16" (2/32") you should be OK. You can also compare the circumference of the tires, they should be within 1/4" with the same air pressure in each.
That's just an example, from Subaru, found online. Your owner's manual should have the specification for your particular vehicle.

If your vehicle is front drive or rear drive you may have more flexibility. Consult your owner's manual.
You gotta tell us what you're driving. But with only 2,000 mi you will probably be fine.
If you get any issues with traction systems, you can get the tires shaved.
Rotate your tires regularly to balance wear.

Just make sure it is the exact same model tire and all are properly inflated. Different size or unevenly worn tires can confuse the ABS , Stability and AWD electronics in the car as they depend on the tires rolling at the same speed. I would think 2000 miles extra on the three remaining tires would have insignificant wear to cause a problem.
