Scotty, What would be a good option for my first Sports Car, I've been wanting one for forever now, Would a Mustang be a good start?

You need to ask yourself, "What am I willing to sacrifice to have this car?" If reliability/longevity is on the list, the Challenger is a good choice. Excellent styling and great motor options, but crap quality and Stellantis support.
The new Mustangs are bad news. 2018+ have all kinds of problems. Take it from someone who sued Ford over their 5.0L 3rd Gen V8 - pass on them. I can not state that enough, and the MT-82 manuals are Chinese junk as well.
As for Camaro, it's a modern GM car. Electrical issues, transmission problems, paint problems....the list is long.
I would not recommend any modern muscle cars as they aren't made well and are severely overpriced. The Lexus may be a good choice but realize it is a different animal. You'll want to test drive it to see what you think.

If you care about longevity and minimal issues during your ownership period and if we are talking fun to drive 2 door versions (what I think of for sports cars) look at a Mazda MX-5 Miata (more of a roadster though and tiny) or a Lexus RC350. I would go used for both.
Fast, cheap, reliable: “Pick any 2 of the 3, but you can’t have all 3” — a wise mechanic once told me.
Stay away from the newer Mustangs, Camaros, and Challengers.

Well not that this will happen because I haven't decided what I actually want yet, of all the three, Camaro, Challenger, or Mustang, I'd choose the Mustang, Maybe Challenger, but not the Camaro, but I was also thinking of the Lexus IS F-Sport
Miata, Civic so, Honda S2000.
If you can wait until next year, take a look at the Acura Integra. While no one knows the longevity of the Integra since it is di new, odds are it will be of good quality since it is coming from Honda/Acura.
I read there may be a lift back option
370Z for used are pretty bulletproof , maybe wait for 400Z if looking new
