Hey Scotty,
My wife and I are both tall I'm 6'2 and my son is not over growing yet and he's as tall as I am. Not much cars today have space for passengers over 6'. My wife says we have no other choice but to buy a minivan but I find this too big and expensive. Is there any other vehicle out there now (new or recent) that have leg and head room for giant passengers, help ?!
no other choice but to buy a minivan
Minivans are not better suited for taller people - they have WORSE accommodations than a midsize SUV.
Compared to a Sienna, a Honda CR-V has 1.0" more legroom and only slightly less headroom,
Same in the back, 0.5" more legroom, and only 0.2" less headroom.
If you want more headroom than a CRV, the Mazda CX-5 has it.

Not much cars today have space for passengers over 6'
The tallest guy I know, a professional dirt bike (he's about 15cm taller than me and I'm 182cm/183cm ~6') racer drives an old Mazda3 and a Mazda6 (from the Ford era) and has absolutely no issues fitting inside those.
And personally at 6', I have owned a '09 Corolla and had no issues fitting after dialing in the seat position correctly
(It has requires some tinkering but other than slightly limited headroom and the dead pedal being way too small for 12.5 sized shoes - no issues)
I have a 2020 Kia Niro SUV, and although we do not recommend KIAs, I have a solid 7"-8" of headroom with the seat jacked up to enjoy the SUV sitting position, and still have ridiculous legroom for the passengers behind me (easily enough for a 6'+ adult to feel comfortable.)

Yes it does require adjusting the seating correctly, but defiantly no issue fitting in a well laid out compact SUV.
leg and head room for giant passengers
Look, the average height in Germany, Serbia, Sweden, Lithuania, Latvia, Netherlands, Iceland is 5' and 11.5 inches
There are many people there significantly over 6', and the best selling cars are hatches like the VW Golf and SUVs like the VW Tiguan.
And even small European market cars offer the same legroom and headroom as "Minivans for 'giant' people", my small SUV offers better leg room and just 1.0" less headroom than a Sienna in the front. And the rear is more than enough too.
Budget? New/used?
There was a discussion about this here back in 2021, might be some helpful info there:
