Hi all,
I've been noticing that my A/C temperature is 'jumpy'. When set on the coldest temperature, it will blow cold air as it should. Then for a few seconds, the air would still be cool but warmer (you can feel the difference). It happens very frequently. Does anyone know how I could fix this?

Check refrigerant level. What may be happening is there's enough refrigerant for the compressor to engage initially, but after it starts running the suction side drops pressure to the point where the low pressure safety switch turns off the compressor. (Are you getting rapid compressor cycling?)
Sorry for the incredibly late response, I'm not sure how to diagnose it myself. But I've seen videos of other guys just filling back up their refrigerant with Freon so i was considering to try that out myself to see if that helps.
Well, you could add a little at a time and see if it improves but you really should monitor system pressures while doing it. Working blind is risky. Severe overcharging may damage something. There are videos on youtube showing how to use gauges. Never use a product containing sealer.

You should be able to tell if your compressor is cycling on and off in 5-10 minutes. Start the engine, turn the air to max A/C and set the temperature as low as possible. Pop the hood and watch the compressor clutch/ pulley. It should stay running constantly if it's warm/ hot outside. If you can't see the compressor, listen for a clicking sound. That'll tell you if the compressor clutch is engaging and disengaging. If it is, you're probably just low on refrigerant. Scotty says it slowly seeps out over the years.

After you check the a/c refrigerant which like the others I agree sounds like your problem, I also highly suggest replacing the o-rings in the automatic electronic temperature controls if you have those controls versus the manual dials.
When the black o-rings dry out they leak vacuum and you'll get erratic operation. In my case, it caused the blend doors to move changing back and forth from max ac or ac to allowing heat in to getting stuck on heat, to getting stuck on defrost. It was real gradual over time, first started to blow back and forth cold then a little hot and then back to cold and eventually a couple months later got stuck on defrost. The silicone o-rings are about $2 on Amazon and I think it took me a little more than 30 minutes as a novice. Watch this YouTube video.
