Hey Scotty, I have a quick question. I have 2018 Chevy Malibu and it recommends I use 5W-20 oil, but if I went with a 0W-20 oil would that be a problem? The oil would flow better for that initial start up, would it not?

No problem at all. And you're absolutely right.
0w20 is better for your engine than 5w20
I would use the weight oil recommended by the manufacturer for the ambient temperature the vehicle is being operated in. Owner's manual reference.
Look in your car manual to see if they suggest a different oil for colder conditions. If not just continue to use the recommended oil.
