I noticed that my mechanic here in Germany applied some kind of paste before mounting my brake discs and apon asking about it he said that it prevents rusting. Any idea if it works or will you try it yourself?

The rule is (Never) apply grease to the braking surfaces (face of the rotor or pad). Brake "lube" should always be applied to the caliper glides (I always clean the glides and boots first before applying new brake lube grease). this will help the calipers glide smoothly, reduce moisture and rust, etc.
This said, regarding applying paste to disc brakes,
Brake (lube) grease or anti-squeal grease can be applied to the (backside) of the pads and the brake pad (tabs) to reduce brake squeal, moisture and rust, however, always apply a very thin coat and I would not apply grease directly near the rotors.
In addition, I always (carefully clean the face of both rotor and new brake pads with brake cleaner prior to installation) being careful not to spray any rubber parts or greased areas.
The following example is a pretty good example but I would use even less than he applies (especially in the caliper tab area near the rotor face).

Yes, your mechanic applied anti-seize on the wheel hub to prevent rust build-up and make it easier to remove the brake rotor and rim for the next brake service. Sometimes grease is used on the brake pad shims to reduce/eliminate rattling sounds, but most brake pads use anti-rattle clips anyways.
